Pumpkin Spice Granola

Happy October!

Fall has officially arrived, so I am craving all kinds of pumpkin! If you saw my last post, Pumpkin Pie Smoothie Bowl, I’m giving you the best granola you could top it with- PUMPKIN!

Making this, I thought about when I wouldn’t go near pumpkin anything; but now I can’t go without it!

Since I’ve never made pumpkin granola before and I’ve never added pumpkin puree in something like this, I wasn’t sure how this was going to turn out. But, I have to say I am very pleased! It’s crunchy, filled with clusters, and has a subtle yet perfect pumpkin flavor 🙂

And, not only does it go perfectly with the creaminess of the pumpkin pie smoothie, I know it’ll be equally as delicious with sliced banana and peanut butter… I’m already drooling… guess what I’m having for breakfast tomorrow?!

INGREDIENTS

  • 2 cups old fashioned rolled oats
  • 2 teaspoons cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 2-4 tablespoons maple syrup, to your preferred sweetness!
  • 2 tablespoons coconut oil, melted
  • 3 tablespoons pumpkin puree
  • any add-ins: nuts, seeds, dried fruit, etc.

 

DIRECTIONS

  1. Preheat oven to 350 degrees F.
  2. Mix all of the ingredients together until equally combined, minus the ad-ins
  3. Line a baking sheet with parchment paper and spread out the granola evenly on the pan
  4. Bake for 15 minutes
  5. Take it out of the oven and mix, also mix in any add-ins at this time
  6. Bake for another 5 minutes, or until crispy
  7. Let cool, then transfer to an airtight container
